Hi everyone!
Today I want to share with you one of my favorite recipes in the world... it's the red velvet cake. The red velvet it's just a chocolate cake but we add some red coloring to get this amazing look and we top this cake or cupcakes with cream cheese frosting that's just as tasty as the red velvet cake itself.
Ingredients:
- 2 1/2 cups cake flour
- 2 tablespoonsof unsweetened cocoa powder
- 1 teaspoon salt
- 1 1/2 cups of sugar
- 1 1/2 cup of vegetable oil
- 2 large eggs
- 1/2 of teaspoon of red food color
- 1 teaspoon of vanilla extract
- 1 cup of buttermilk 1
- 1/2teaspoon of baking soda
- 2 teaspoons of white vinegar
Directions:
Preheat the oven to 350 degrees. Wisk together cake flour, cocoa, salt. With electric mixer on medium high speed mix together oil and sugar add eggs one at a time and don't forget to scrap down side of bowl as needed. Mix in food color and vanilla.
Reduce speed and add flour in three batches alternating with buttermilk, whisking well after each. Stir together the baking soda and vinegar in a small bowl and then added to the batter on medium speed for 10 seconds. You can use this recipe for cupcakes or for cakes.
To finish this, use a small offset spatula to spread the cake or cupcakes with frosting.
NOTE: For this recipe try to use gel paste food color because he's much more concentrated then the supermarket variety if that's what you have you're going to use a lot of liquid to achieve the desired shade and sometimes this coloring have some weird taste that could ruin your cake or cupcake.
For the frosting, mix 4 ounces of unsalted butter, 6 ounces of cream cheese, 2 cups of confectioners sugar and 1 teaspoon of vanilla extract until smooth.
This could be refrigerated for 3 days and before you use it bringing to room temperature and beat it until smooth.
